Certified Correctional Food Systems Manager program
There were twenty one (21) managers and supervisors of the Food Services Unit who graduated with a nationally recognized professional certification program known as Certified Correctional Food Systems Managers. This course of study was developed and is sponsored by the Association of Correctional Food Service Affiliates. The Career Development Bureau, LASDU, Correctional Services Division and the Food Services Unit jointly sponsored this meaningful program.
The Certified Correctional Food Systems Manager
program was an intense twelve-month process which
included extensive course work, field exercises,
classroom and small group sessions, quizzes and a final
certification exam. The course facilitator was our own
Food Manager Benson Li who was assisted by Food Services
Chief Eve Wang.
Technical training and recognition of competence are the
cornerstones of professional growth and advancement. The
completion of this nationally certified program has
advanced the Los Angeles County Sheriff’s Department and
the Food Services Unit as correctional leaders
internationally. The twentyone certified Correctional
Food Systems Managers within the Sheriff’s Department
are the largest number of certified managers in the
correctional field in the United States.
Some of the learning objectives included an
introduction to the correctional food service
profession, basics of menu planning, understanding
nutrition and modified diets, quantity food production
practices and standards, receiving, storage,
preparation, and overall food production, food safety
standards, warewashing and kitchen sanitation, safety in
the workplace and custody security, and working with
inmates.
Under the leadership and direction of Sheriff Baca, a
major focus on leadership and career development was
provided. Acting Chief Alex Yim also provided
instruction on leadership and career mentoring as well.
In partnership with the Correctional Services Division
and the Professional Development Bureau, thirteen (13)
additional Food Services staff will begin taking this
course starting October 2007. Additional courses will
also be offered in the future.
